A Sweet, Sweet Holiday: Rike's Coconut Cookies
My coconut cookies are no long family tradition, but they are a rather recent addition to my baking repertoire. They were an instant hit with who have tried them, however, and they are ever so easy to make. So here they are. Have fun baking!
- 100g /3.5 oz. flour
- half a teaspoon of baking powder
- 100g /3.5 oz.coconut flakes
- 100g /3.5 oz.soft butter
- 100g /3.5 oz.sugar
- 1 pinch of salt
- 1 egg at room temperature
Heat the oven to 180° Celsius / 350° Fahrenheit (16o° Celsius / 320° Fahrenheit if you have a convection oven). Actually, with my own oven I usually go 10° lower than that, because the cookies brown very quickly.
Mix flour, baking powder and coconut flakes. In another bowl, mix butter, sugar and salt with a mixer. Then add the egg and beat until you get a creamy mixture. Add the flour mixture at one go and mix very quickly with the egg mixture.
Put a piece of baking paper on a baking tray. With two teaspoons, form little heaps of dough the size of a walnut and place them on the tray. Leave sufficient space between them.
Place the tray in the oven at mid-height and bake for 11-13 minutes until the cookies are golden. Let the cookies cool on a cooling rack. If you want, you can dust them with powdered sugar but I don’t – they are sweet enough already! Enjoy!
